How does the intermission video bumper work? Ideally would be,, if i press pause on my remote during video.. is that the case?

The intermission is just a Video Bumper Type and isn't triggered by a pause event. It's designed for use between features. I have my Sequence set up to do an intermission and 10 minutes of trivia between features, for example.

Not at this time without modification to the add-on and Kodi allowing multiple playback streams at once.

I could give you access to the newest trivia data and you would have to translate the spreadsheets somehow.

What music do you guys use while playing trivia?

When using trivia, its mostly always about 1 movie

How do you guys do this? Causei'd rather have general questions about all sort of movies instead of one movie all the time?

I tend to use the music I like from different movie soundtracks. There are others here who tend to go for Top 40. Don't forget, it doesn't have to be music files. You can point Music to a Playlist (PLS) file containing information for a streaming radio station as well. That's useful when you want a wide variety of music that you don't have to maintain, but it does require bandwidth and the correct information in the file.

It's totally up to you what you use, that's just my personal preference. I have all of my trivia scraped and I just let the add-on decide what to play. It pulls from a ton of different trivia about movies, actors, etc.
